My approach to flavour is influenced by both my professional pastry background and a love of nostalgia. Familiar flavours provide inspiration, but they are reimagined through modern chocolate-making techniques and contemporary presentation.

I use sustainably sourced Belgian chocolate from Callebaut, selecting different chocolate styles to complement the individual flavours and fillings.
Dark, milk, white, Gold and Ruby chocolate each bring their own character, allowing the chocolate shell and filling to work together as one complete experience.
Inside each shell you’ll find carefully developed fillings inspired by classic combinations, fine patisserie and the flavours and memories of childhood.
The result is a collection of artisan chocolate bonbons that combine traditional craftsmanship with contemporary design.

Adrian Oliver Chocolates grew from a lifelong passion for pastry and fine food.
After earning my City & Guilds catering qualifications, I specialised in patisserie and competed in culinary competitions before spending years refining my craft in 5-star hotels and fine-dining kitchens.
After a decade away from professional kitchens, I returned to chocolate by making chocolates for friends and family during the holidays.
Their encouragement reignited my passion and began a new chapter focused on artisan chocolate bonbons and truffles.
Today, I combine that professional pastry experience with a fascination for the art and science of chocolate making, continually refining my techniques to create chocolates with exceptional flavour, texture and presentation.
