Our collection brings together classic flavours, modern combinations and nostalgic favourites, with each bonbon created to balance its chocolate shell, filling, texture and flavour.<\/span><\/p>\n

From smooth <\/span>hazelnut praline<\/span><\/strong> and rich chocolate ganache to tangy fruit p\u00e2te de fruit, salted caramel, aromatic espresso and refreshing mint, there is something different to discover in every selection.<\/span><\/p>\n

I use six chocolates from <\/span>Callebaut’s Belgian chocolate range<\/span><\/strong>, selecting each one to complement the flavour and filling inside.<\/span><\/p>\n

Dark Chocolate \u2014 70.5% Cocoa<\/span><\/h3>\n

Callebaut 70-30-38, with 70.5% cocoa solids. A deep, intense dark chocolate chosen for flavours that benefit from a more pronounced cocoa character.<\/span><\/p>\n

Plain Dark Chocolate \u2014 54.5% Cocoa<\/span><\/h3>\n

Callebaut 811, with 54.5% cocoa solids. A versatile dark chocolate with enough intensity to complement ganache, caramel, mint and coffee.<\/span><\/p>\n

Milk Chocolate \u2014 33.6% Cocoa<\/span><\/h3>\n

Callebaut 823, with 33.6% cocoa solids. Smooth and creamy, making it particularly well suited to pralines and softer, sweeter fillings.<\/span><\/p>\n

White Chocolate \u2014 28% Cocoa<\/span><\/h3>\n

Callebaut W2, with 28% cocoa solids. Its creamy sweetness provides a delicate shell for fruit and other lighter flavours.<\/span><\/p>\n

Gold Caramel Chocolate \u2014 30.4% Cocoa<\/span><\/h3>\n

Callebaut Gold, with 30.4% cocoa solids. Its distinctive caramel character makes it a natural partner for flavours such as honey and caramel.<\/span><\/p>\n

Ruby Chocolate \u2014 32.8% Cocoa<\/span><\/h3>\n

Callebaut Ruby, with 32.8% cocoa solids. Its distinctive colour and berry-like character work particularly well with fruit-based fillings.<\/span><\/p>\n

The chocolate needs to complement the filling. Sweetness needs to be balanced by acidity, bitterness, salt or roasted flavours where appropriate. Textures should provide contrast, while the final chocolate should melt smoothly on the palate.<\/span><\/p>\n
